  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and diced carrots. Sauté for 5 minutes until onion is translucent and carrots start to soften.
  3. Stir in minced garlic and smoked paprika, cooking for an additional 1-2 minutes until fragrant.
  4. Add the diced potatoes, white beans, canned tomatoes (with juices), vegetable broth, bay leaf, salt, and black pepper. Stir well to combine.
  5. Increase heat to bring to a simmer. Once simmering, reduce heat to low and cover the pot. Cook for 15-20 minutes until potatoes are fork-tender.
  6. Remove the bay leaf and add the chopped kale, stirring until wilted, about 5 minutes.
  7. Taste and adjust seasoning if necessary. Simmer for an additional 2-3 minutes if needed.
  8. Serve hot, garnished with fresh parsley.
