Ingredients
- 400.0 g white beans
- 200.0 g kale (stems removed, chopped)
- 1.0 unit onion (chopped)
- 3.0 unit garlic (minced)
- 2.0 unit carrot (diced)
- 2.0 unit potato (diced)
- 1.0 l vegetable broth
- 400.0 g canned tomatoes
- 2.0 tbsp olive oil
- 1.0 tsp smoked paprika
- 1.0 tsp salt
- 0.5 tsp black pepper
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and diced carrots. Sauté for 5 minutes until onion is translucent and carrots start to soften.
- Stir in minced garlic and smoked paprika, cooking for an additional 1-2 minutes until fragrant.
- Add the diced potatoes, white beans, canned tomatoes (with juices), vegetable broth, bay leaf, salt, and black pepper. Stir well to combine.
- Increase heat to bring to a simmer. Once simmering, reduce heat to low and cover the pot. Cook for 15-20 minutes until potatoes are fork-tender.
- Remove the bay leaf and add the chopped kale, stirring until wilted, about 5 minutes.
- Taste and adjust seasoning if necessary. Simmer for an additional 2-3 minutes if needed.
- Serve hot, garnished with fresh parsley.
