Ingredients
- 400.0 g turkey breast (sliced into thin strips)
- 200.0 g spinach (washed and roughly chopped)
- 200.0 g rice (preferably jasmine or basmati, cooked)
- 2.0 tbsp olive oil
- 2.0 unit garlic (cloves, minced)
- 3.0 tbsp soy sauce (ensure it's gluten-free if needed)
- 1.0 tsp ginger (freshly grated)
- 3.0 unit spring onions (sliced)
- 0.5 tsp salt (adjust to taste)
- 0.25 tsp black pepper (freshly ground)
- 1.0 tbsp sesame seeds (for garnish)
Instructions
- Heat 1 tablespoon of olive oil in a large frying pan or wok over medium-high heat.
- Add the minced garlic and grated ginger, stirring for about 30 seconds until fragrant.
- Increase the heat to high and add the sliced turkey strips. Cook for 5-7 minutes until the turkey is browned and cooked through, stirring frequently.
- Add the cooked rice to the pan, stirring well to combine with the turkey.
- Pour in the soy sauce, mixing everything thoroughly and ensuring the rice is well coated.
- Add the chopped spinach and sliced spring onions, stirring until the spinach is wilted, about 2-3 minutes.
- Season with salt and black pepper, adjusting to taste.
- Drizzle the remaining tablespoon of olive oil over the mixture and stir well.
