  1. Heat 1 tablespoon of olive oil in a large frying pan or wok over medium-high heat.
  2. Add the minced garlic and grated ginger, stirring for about 30 seconds until fragrant.
  3. Increase the heat to high and add the sliced turkey strips. Cook for 5-7 minutes until the turkey is browned and cooked through, stirring frequently.
  4. Add the cooked rice to the pan, stirring well to combine with the turkey.
  5. Pour in the soy sauce, mixing everything thoroughly and ensuring the rice is well coated.
  6. Add the chopped spinach and sliced spring onions, stirring until the spinach is wilted, about 2-3 minutes.
  7. Season with salt and black pepper, adjusting to taste.
  8. Drizzle the remaining tablespoon of olive oil over the mixture and stir well.
