Ingredients
- 1.0 kg chicken thighs (bone-in, skin-on for best results)
- 120.0 ml soy sauce (use light soy sauce if available)
- 60.0 ml vinegar (white or cane vinegar preferred)
- 6.0 unit garlic (crushed)
- 3.0 unit bay leaves
- 10.0 unit black peppercorns (whole)
- 60.0 ml water
- 15.0 g sugar (brown sugar)
- 15.0 ml cooking oil
- 1.0 unit onion (chopped)
- 1.0 pinch salt (to taste)
Instructions
- In a bowl, combine chicken, soy sauce, vinegar, garlic, bay leaves, and peppercorns. Marinate for at least 20 minutes.
- Heat oil in a large pan over medium heat. Sauté the onions until they become translucent, about 3 minutes.
- Add the marinated chicken to the pan, including the marinade. Increase heat to medium-high and sear the chicken until browned on all sides, about 7-10 minutes.
- Reduce the heat to medium. Add water and sugar. Stir gently to dissolve the sugar.
- Bring the mixture to a simmer. Cover the pan and let it cook for 30 minutes, stirring occasionally to ensure the chicken cooks evenly. Check that the sauce is thickened and the chicken is cooked through.
- Taste the sauce and adjust seasoning with salt if necessary.
