Pesto Stuffed Chicken Breast

  1. Preheat your oven to 180°C.
  2. Using a sharp knife, carefully slice each chicken breast horizontally to create a pocket. Be sure not to cut all the way through.
  3. Spread about 1 tablespoon of pesto inside each pocket. Ensure even coverage for flavor enhancement.
  4. Place a slice of mozzarella, a slice of ham, and a slice of tomato inside each chicken breast to fill the pocket.
  5. Use toothpicks or kitchen twine to close the edges of the chicken breast pockets securely.
  6. Heat a tablespoon of oil in a skillet over medium-high heat. Sear each chicken breast for 2-3 minutes on each side until golden brown.
  7. Transfer the seared chicken breasts to a baking dish and bake in the preheated oven for 20-25 minutes until the chicken is cooked through and juices run clear.
  8. Remove from oven and let them rest for 5 minutes to redistribute the juices.
