Instructions
- Pour the coconut milk into a small saucepan and warm it over low heat for 3 to 4 minutes, stirring occasionally, until it is steaming lightly but not simmering or boiling.
- Add the popcorn to the warm coconut milk, keep the heat on low, and let it steep for 4 minutes, stirring once or twice, until the milk smells gently toasted and the popcorn softens slightly.
- Remove the pan from the heat and leave the mixture to stand for 2 minutes, then strain out the popcorn if you want a smoother drink, pressing lightly to extract flavour.
- Break the bananas into pieces and place them in a blender with the thick yoghurt, honey, cinnamon, vanilla extract and the pinch of salt, seasoning at this stage so the sweetness and warmth are balanced.
- Pour in the warm popcorn-infused coconut milk and blend on medium-high speed for 30 to 45 seconds, until the mixture is completely smooth, thick and lightly frothy.
