German Potato Pancakes (Kartoffelpuffer)

Ingredients
- 500.0 g potatoes (peeled and grated)
- 1.0 unit onion (medium, finely chopped)
- 2.0 unit eggs (lightly beaten)
- 50.0 g all-purpose flour
- 1.0 tsp salt
- 0.5 tsp black pepper
- 50.0 ml vegetable oil (for frying)
Instructions
- Place the grated potatoes in a clean kitchen towel and squeeze out as much liquid as possible. Transfer the dry potatoes to a large mixing bowl.
- Add the chopped onion, eggs, flour, salt, and pepper to the bowl with the potatoes. Mix until well combined, ensuring the mixture holds together.
- Heat the vegetable oil in a large frying pan over medium-high heat until shimmering.
- Spoon about 2 tablespoons of the potato mixture into the pan and flatten it with the back of the spoon to form a pancake.
- Fry each side for 3-4 minutes, or until the pancakes are golden brown and crispy. Adjust the heat as necessary to avoid burning.
- Remove the pancakes from the pan and drain on paper towels. Season with a little more salt while hot, if desired.
