  1. Place the grated potatoes in a clean kitchen towel and squeeze out as much liquid as possible. Transfer the dry potatoes to a large mixing bowl.
  2. Add the chopped onion, eggs, flour, salt, and pepper to the bowl with the potatoes. Mix until well combined, ensuring the mixture holds together.
  3. Heat the vegetable oil in a large frying pan over medium-high heat until shimmering.
  4. Spoon about 2 tablespoons of the potato mixture into the pan and flatten it with the back of the spoon to form a pancake.
  5. Fry each side for 3-4 minutes, or until the pancakes are golden brown and crispy. Adjust the heat as necessary to avoid burning.
  6. Remove the pancakes from the pan and drain on paper towels. Season with a little more salt while hot, if desired.
