  1. Preheat the oven to 220°C fan and spread the fries in an even layer, then bake them for 18 to 22 minutes until golden at the edges and crisp on the outside, turning once halfway through for even colour.
  2. Meanwhile, heat the olive oil over medium-high heat and cook the sliced onion for 4 to 5 minutes until softened and lightly golden, then stir in the garlic for 30 seconds until fragrant but not browned.
  3. Add the lamb mince to the pan over high heat and cook it for 6 to 8 minutes, breaking it up well, until deeply browned with no pink remaining and any released moisture has mostly evaporated.
  4. Stir in the cumin, smoked paprika, oregano, salt, black pepper and chilli flakes over medium heat, then cook for 1 minute until the spices smell toasty and coat the meat evenly; taste and add a little more salt or pepper if needed.
  5. Reduce the oven to 200°C fan and spread half of the baked fries into a casserole dish, spoon over half of the spiced meat, then scatter over half of the cheddar and mozzarella for the first layer.
  6. Repeat with the remaining fries, remaining meat and the rest of the cheese, pressing the top lightly so the layers settle without compacting them too much.
  7. Bake the casserole at 200°C fan for 12 to 15 minutes until the cheese is fully melted, bubbling around the edges and lightly browned on top.
  8. Rest the casserole for 5 minutes at room temperature until the layers hold together more neatly, then top with shredded lettuce, diced tomato and cucumber so the salad stays fresh and crisp.
