  1. Heat a large skillet over medium heat (around 180°C).
  2. Add olive oil and sliced onion, sauté for about 3-4 minutes until the onion becomes translucent.
  3. Add the bratwurst to the skillet and cook for 5-6 minutes, turning occasionally until browned on all sides.
  4. Add sauerkraut and black pepper to the skillet, stirring gently to combine; cook for another 10-12 minutes, allowing flavours to meld.
  5. If using, sprinkle in caraway seeds for added flavour and stir well.
  6. Make sure the bratwurst reaches an internal temperature of 70°C for safe consumption.
  7. Taste the sauerkraut and adjust seasoning if necessary; serve while hot with mustard on the side.
  8. Plate the dish, ensuring bratwurst and sauerkraut are heaped attractive and drizzle with any remaining pan juices.
