  1. Heat the olive oil over medium heat in a large pan. Add the chopped onion and cook until soft and translucent, about 5 minutes.
  2. Add the minced garlic, carrot, and celery. Cook for another 5 minutes until the vegetables have softened, stirring occasionally.
  3. Increase the heat to medium-high and add the minced beef. Cook until browned, breaking it apart with a spoon, about 8 minutes.
  4. Pour in the red wine and let it simmer for 2 minutes to reduce slightly.
  5. Stir in the canned tomatoes, tomato puree, oregano, and basil. Season with salt and pepper. Lower the heat to a gentle simmer, cover partially, and cook for 45 minutes, stirring occasionally.
  6. Meanwhile, cook the spaghetti according to package instructions in a pot of boiling salted water until al dente. Drain and set aside.
  7. Taste the Bolognese sauce and adjust the seasoning if needed. It should be rich and aromatic.
  8. Serve the sauce over the spaghetti and sprinkle with grated Parmesan cheese.
