  1. Preheat your oven to 200°C (180°C fan).
  2. Pat the chicken dry with paper towels. Drizzle with olive oil and rub it all over the skin.
  3. Season the chicken inside and out with salt and black pepper.
  4. Stuff the cavity with lemon halves, smashed garlic cloves, rosemary, thyme, and onion quarters.
  5. Place the chicken breast side up in a roasting pan.
  6. Roast in the preheated oven for about 90 minutes, or until the internal temperature reaches 75°C in the thickest part of the thigh.
  7. Baste the chicken with juices every 30 minutes for extra flavour and moisture.
  8. Once cooked, let the chicken rest for 10 minutes before carving.
