Herb-Roasted Whole Chicken

Ingredients
- 1.0 unit whole chicken (about 1.5 kg)
- 2.0 tbsp olive oil
- 1.0 unit lemon (halved)
- 4.0 unit garlic cloves (peeled and smashed)
- 4.0 g fresh rosemary (or 2 sprigs)
- 4.0 g fresh thyme (or 2 sprigs)
- 1.0 tsp salt
- 0.5 tsp black pepper
- 1.0 unit onion (quartered)
Instructions
- Preheat your oven to 200°C (180°C fan).
- Pat the chicken dry with paper towels. Drizzle with olive oil and rub it all over the skin.
- Season the chicken inside and out with salt and black pepper.
- Stuff the cavity with lemon halves, smashed garlic cloves, rosemary, thyme, and onion quarters.
- Place the chicken breast side up in a roasting pan.
- Roast in the preheated oven for about 90 minutes, or until the internal temperature reaches 75°C in the thickest part of the thigh.
- Baste the chicken with juices every 30 minutes for extra flavour and moisture.
- Once cooked, let the chicken rest for 10 minutes before carving.
