Creamy Pork Chops with Vegetable Rice and Peppers

Ingredients
- 2.0 unit pork chops (defrosted)
- 250.0 g vegetable rice (frozen)
- 150.0 g peppers (frozen)
- 200.0 g tomatoes (tinned or fresh, chopped)
- 1.0 tbsp cream cheese
- 50.0 g grated cheese (your choice of cheese)
Instructions
- Preheat a large frying pan over medium-high heat. Season the pork chops with salt and pepper on both sides.
- Add a splash of oil to the pan and sear the pork chops for 4-5 minutes on each side until golden brown. Remove and set aside.
- In the same pan, reduce the heat to medium and add the frozen peppers. Sauté for 3-4 minutes until they begin to soften.
- Add the chopped tomatoes to the pan. Cook for another 5 minutes, stirring occasionally, until the mixture is slightly thickened.
- Stir in the cream cheese until it's melted and the sauce is creamy. Return the pork chops to the pan, coating them in the sauce. Cover and simmer on low for 10 minutes.
- Meanwhile, cook the vegetable rice according to package instructions.
- Serve the pork chops topped with the creamy tomato and pepper sauce, alongside the vegetable rice. Sprinkle grated cheese over the top before serving.
