Tropical Tahini Energy Bites

  1. In a large mixing bowl, mash the ripe banana until smooth using a fork.
  2. Add the tahini, peanut butter, and natural yoghurt to the mashed banana. Mix until well combined and smooth.
  3. Stir in the finely chopped dried mango, freshly grated ginger, and ground cinnamon.
  4. Gradually add water to achieve a thick, but pliable dough-like consistency. Adjust the water as necessary.
  5. Using your hands, roll the mixture into small balls, about the size of a walnut.
  6. Place the energy bites on a tray lined with baking paper.
  7. Refrigerate the bites for at least 1 hour to firm up before serving.
