Tropical Tahini Energy Bites

Ingredients
- 60.0 g tahini
- 60.0 g peanut butter (smooth or crunchy as preferred)
- 50.0 g dried mango (finely chopped)
- 50.0 g natural yoghurt (Greek yoghurt preferred)
- 30.0 ml water (adjust for consistency)
- 1.0 tsp ground cinnamon
- 1.0 unit banana (ripe)
- 1.0 tsp ginger (freshly grated)
Instructions
- In a large mixing bowl, mash the ripe banana until smooth using a fork.
- Add the tahini, peanut butter, and natural yoghurt to the mashed banana. Mix until well combined and smooth.
- Stir in the finely chopped dried mango, freshly grated ginger, and ground cinnamon.
- Gradually add water to achieve a thick, but pliable dough-like consistency. Adjust the water as necessary.
- Using your hands, roll the mixture into small balls, about the size of a walnut.
- Place the energy bites on a tray lined with baking paper.
- Refrigerate the bites for at least 1 hour to firm up before serving.
