Beef and Mushroom Stir Fry

Ingredients
- 500.0 g beef (Thinly sliced)
- 4.0 unit spring onions (Sliced into 5 cm pieces)
- 200.0 g mushrooms (Sliced)
- 3.0 tbsp soy sauce
- 2.0 tsp garlic (Minced)
- 1.0 tsp ginger (Grated)
- 1.0 tbsp sesame oil
- 1.0 tbsp cornflour (Mixed with 2 tbsp water)
- 2.0 tbsp vegetable oil
- 1.0 pinch pepper (To taste)
Instructions
- Heat 1 tbsp of vegetable oil in a large pan or wok over medium-high heat until shimmering.
- Add the sliced beef to the pan, seasoning with a pinch of pepper. Stir-fry for 3-4 minutes until browned. Remove the beef and set aside.
- In the same pan, add the remaining 1 tbsp of vegetable oil. Add the minced garlic and grated ginger, stirring for 30 seconds until fragrant.
- Add the mushrooms to the pan. Stir-fry for 3 minutes until they start to soften.
- Return the beef to the pan and add the sliced spring onions. Stir well to combine.
- Pour the soy sauce and sesame oil over the mix. Stir to coat the ingredients evenly.
- Add the cornflour mixture to the pan, stirring continuously until the sauce thickens, about 1-2 minutes.
- Serve hot, optionally garnished with additional spring onion slices.
