Beef and Mushroom Stir Fry

ingredients you already have: beef, spring onion, mushrooms...give me a simple stir fry

  1. Heat 1 tbsp of vegetable oil in a large pan or wok over medium-high heat until shimmering.
  2. Add the sliced beef to the pan, seasoning with a pinch of pepper. Stir-fry for 3-4 minutes until browned. Remove the beef and set aside.
  3. In the same pan, add the remaining 1 tbsp of vegetable oil. Add the minced garlic and grated ginger, stirring for 30 seconds until fragrant.
  4. Add the mushrooms to the pan. Stir-fry for 3 minutes until they start to soften.
  5. Return the beef to the pan and add the sliced spring onions. Stir well to combine.
  6. Pour the soy sauce and sesame oil over the mix. Stir to coat the ingredients evenly.
  7. Add the cornflour mixture to the pan, stirring continuously until the sauce thickens, about 1-2 minutes.
  8. Serve hot, optionally garnished with additional spring onion slices.
