Classic Tomato Sauce

Ingredients
- 2.0 tbsp olive oil (Extra virgin for best flavour)
- 1.0 unit onion (Finely chopped)
- 3.0 unit garlic cloves (Minced)
- 400.0 g canned tomatoes (Preferably whole peeled)
- 2.0 tbsp tomato paste (Adds depth of flavour)
- 1.0 tsp dried oregano
- 1.0 tsp dried basil
- 1.0 tsp sugar (Balances acidity)
- 0.5 tsp salt (To taste)
- 0.25 tsp black pepper (Freshly ground)
- 10.0 g fresh basil (Chopped, for garnish)
Instructions
- Heat the olive oil in a medium saucepan over medium heat until shimmering.
- Add the chopped onion and sauté for 5-7 minutes until soft and translucent, stirring occasionally.
- Add the minced garlic and cook for 1 minute until fragrant, making sure not to brown it.
- Stir in the tomato paste and cook for 2 minutes, allowing it to caramelise slightly.
- Add the canned tomatoes, breaking them up with a spoon. Stir in the dried oregano, dried basil, sugar, salt, and black pepper.
- Bring the sauce to a gentle simmer, then reduce the heat to low. Cover and cook for 30 minutes, stirring occasionally, until the sauce thickens and the flavours meld.
- Taste and adjust seasoning with more salt and pepper if needed.
- Remove from heat and stir in the fresh basil before serving.
