  1. Heat the olive oil in a medium saucepan over medium heat until shimmering.
  2. Add the chopped onion and sauté for 5-7 minutes until soft and translucent, stirring occasionally.
  3. Add the minced garlic and cook for 1 minute until fragrant, making sure not to brown it.
  4. Stir in the tomato paste and cook for 2 minutes, allowing it to caramelise slightly.
  5. Add the canned tomatoes, breaking them up with a spoon. Stir in the dried oregano, dried basil, sugar, salt, and black pepper.
  6. Bring the sauce to a gentle simmer, then reduce the heat to low. Cover and cook for 30 minutes, stirring occasionally, until the sauce thickens and the flavours meld.
  7. Taste and adjust seasoning with more salt and pepper if needed.
  8. Remove from heat and stir in the fresh basil before serving.
