Ingredients
- 800.0 g potatoes (waxy variety preferred)
- 3.0 tbsp olive oil
- 3.0 unit garlic cloves (minced)
- 2.0 tsp rosemary (fresh, chopped)
- 1.0 tsp thyme (fresh, chopped)
- 1.0 tsp sea salt
- 0.5 tsp black pepper (freshly ground)
Instructions
- Preheat your oven to 200°C (180°C fan).
- Wash and cut the potatoes into bite-sized pieces, leaving the skin on for extra texture.
- In a large bowl, combine olive oil, minced garlic, rosemary, thyme, salt, and pepper. Mix well.
- Add the potatoes to the bowl and toss until they are evenly coated with the mixture.
- Spread the potatoes in a single layer on a baking tray lined with parchment paper.
- Roast in the oven for 35-40 minutes, turning halfway through, until golden and crispy on the outside and tender inside.
- Check for doneness by piercing with a fork; it should go through easily.
- Remove from the oven and let them rest for a few minutes before serving.
