  1. Preheat your oven to 200°C (180°C fan).
  2. Wash and cut the potatoes into bite-sized pieces, leaving the skin on for extra texture.
  3. In a large bowl, combine olive oil, minced garlic, rosemary, thyme, salt, and pepper. Mix well.
  4. Add the potatoes to the bowl and toss until they are evenly coated with the mixture.
  5. Spread the potatoes in a single layer on a baking tray lined with parchment paper.
  6. Roast in the oven for 35-40 minutes, turning halfway through, until golden and crispy on the outside and tender inside.
  7. Check for doneness by piercing with a fork; it should go through easily.
  8. Remove from the oven and let them rest for a few minutes before serving.
