Pasta with Tomato & Bell Pepper Sauce and Vegan Meat

Ingredients
- 300.0 g pasta (Use your preferred type of pasta)
- 400.0 g tomatoes (Chopped, use ripe tomatoes for better flavour)
- 2.0 unit shallots (Finely chopped)
- 2.0 unit bell peppers (Chopped, use mixed colours for variety)
- 250.0 g vegan meat (Daring brand) (Chopped into bite-sized pieces)
- 2.0 tbsp olive oil
- 2.0 unit garlic (Minced)
- 1.0 tsp basil (Dried or fresh)
- 0.5 tsp salt
- 0.25 tsp black pepper
Instructions
- Boil a large pot of water with a pinch of salt. Add pasta and cook according to package instructions until al dente. Drain and set aside.
- In a large pan, heat olive oil over medium heat. Add shallots and sauté for 2-3 minutes until translucent.
- Add minced garlic to the pan and cook for an additional minute until fragrant.
- Add chopped bell peppers to the pan, cooking for 5 minutes until they start to soften.
- Stir in the chopped tomatoes, basil, salt, and black pepper. Simmer on low heat for 10-15 minutes until the sauce thickens, stirring occasionally.
- In a separate pan, cook the vegan meat over medium heat for 5-7 minutes until golden brown and heated through.
- Combine the cooked pasta, tomato sauce, and vegan meat in the large pan. Toss gently to coat the pasta evenly with the sauce.
- Adjust seasoning with additional salt and pepper to taste. Serve warm.
