  1. Boil a large pot of water with a pinch of salt. Add pasta and cook according to package instructions until al dente. Drain and set aside.
  2. In a large pan, heat olive oil over medium heat. Add shallots and sauté for 2-3 minutes until translucent.
  3. Add minced garlic to the pan and cook for an additional minute until fragrant.
  4. Add chopped bell peppers to the pan, cooking for 5 minutes until they start to soften.
  5. Stir in the chopped tomatoes, basil, salt, and black pepper. Simmer on low heat for 10-15 minutes until the sauce thickens, stirring occasionally.
  6. In a separate pan, cook the vegan meat over medium heat for 5-7 minutes until golden brown and heated through.
  7. Combine the cooked pasta, tomato sauce, and vegan meat in the large pan. Toss gently to coat the pasta evenly with the sauce.
  8. Adjust seasoning with additional salt and pepper to taste. Serve warm.
