Turkish Meze-style Feast with Grilled Aubergine Hero Dish

  1. Preheat the grill to medium-high heat.
  2. Slice the aubergines lengthwise into 1 cm thick slices. Brush with olive oil and season with salt and black pepper.
  3. Grill the aubergine slices for 5-6 minutes on each side until they are soft and have grill marks. Set aside to cool slightly.
  4. In a bowl, combine minced garlic, lemon juice, tahini, and plain yoghurt. Mix until smooth. Adjust seasoning with salt and pepper.
  5. Chop the grilled aubergines into bite-sized pieces and mix them into the yoghurt-tahini sauce. Sprinkle with sumac and fresh parsley.
  6. Toss the sliced courgettes, red bell pepper, and cherry tomatoes with olive oil, salt, and pepper. Grill for 4-5 minutes until slightly charred.
  7. For the cucumber dip, mix diced cucumber with yoghurt, mint, and a pinch of salt.
  8. Warm the flatbreads on the grill for about 1 minute on each side until soft and warm.
