Turkish Meze-style Feast with Grilled Aubergine Hero Dish

Ingredients
- 2.0 unit aubergines (medium-sized)
- 60.0 ml olive oil
- 2.0 unit garlic (cloves, minced)
- 30.0 ml lemon juice (freshly squeezed)
- 60.0 ml tahini
- 200.0 g plain yoghurt
- 1.0 unit cucumber (small, diced)
- 1.0 unit red bell pepper (sliced)
- 2.0 unit courgettes (sliced)
- 200.0 g cherry tomatoes (halved)
- 4.0 unit flatbread
- 10.0 g fresh mint (chopped)
Instructions
- Preheat the grill to medium-high heat.
- Slice the aubergines lengthwise into 1 cm thick slices. Brush with olive oil and season with salt and black pepper.
- Grill the aubergine slices for 5-6 minutes on each side until they are soft and have grill marks. Set aside to cool slightly.
- In a bowl, combine minced garlic, lemon juice, tahini, and plain yoghurt. Mix until smooth. Adjust seasoning with salt and pepper.
- Chop the grilled aubergines into bite-sized pieces and mix them into the yoghurt-tahini sauce. Sprinkle with sumac and fresh parsley.
- Toss the sliced courgettes, red bell pepper, and cherry tomatoes with olive oil, salt, and pepper. Grill for 4-5 minutes until slightly charred.
- For the cucumber dip, mix diced cucumber with yoghurt, mint, and a pinch of salt.
- Warm the flatbreads on the grill for about 1 minute on each side until soft and warm.
