  1. Preheat your oven to 200°C (180°C fan).
  2. In a small bowl, combine the olive oil, minced garlic, lemon zest, lemon juice, honey, salt, and black pepper.
  3. Place the chicken breasts in a baking dish. Pour the olive oil mixture over the chicken, ensuring each piece is well coated.
  4. Scatter the halved baby potatoes around the chicken in the dish. Toss them gently in the olive oil mixture.
  5. Sprinkle the crumbled feta cheese evenly over the chicken breasts.
  6. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 75°C. The potatoes should be tender and the feta slightly golden.
  7. Remove the dish from the oven. Sprinkle fresh oregano and parsley over the chicken and potatoes before serving.
