Lemon Herb Feta Chicken

Ingredients
- 4.0 unit chicken breasts (boneless and skinless)
- 150.0 g feta cheese (crumbled)
- 1.0 unit lemon (zested and juiced)
- 2.0 tbsp olive oil
- 3.0 unit garlic cloves (minced)
- 2.0 tbsp fresh oregano (chopped)
- 2.0 tbsp fresh parsley (chopped)
- 1.0 tsp salt
- 0.5 tsp black pepper
- 1.0 tbsp honey
- 500.0 g baby potatoes (halved)
Instructions
- Preheat your oven to 200°C (180°C fan).
- In a small bowl, combine the olive oil, minced garlic, lemon zest, lemon juice, honey, salt, and black pepper.
- Place the chicken breasts in a baking dish. Pour the olive oil mixture over the chicken, ensuring each piece is well coated.
- Scatter the halved baby potatoes around the chicken in the dish. Toss them gently in the olive oil mixture.
- Sprinkle the crumbled feta cheese evenly over the chicken breasts.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 75°C. The potatoes should be tender and the feta slightly golden.
- Remove the dish from the oven. Sprinkle fresh oregano and parsley over the chicken and potatoes before serving.
